Strawberry Green Salad

A green salad with a sprinkle of honey glazed walnuts, crunchy cucumbers, red onions, slices of strawberries, feta cheese crumbles, and drizzled with sweet strawberry vinaigrette makes a perfect combination that will simply captivate your taste buds. Counts as 1 carb serving and 2 grams of fiber.

Strawberry Green Salad


Serving size: 2 cups

2 tablespoons
strawberry jam
1⁄4 cup
balsamic vinegar
1 tablespoon
olive oil
iceberg lettuce head (medium)
1 cup
strawberry (halves)
1⁄4 cup
red onion (chopped)
1⁄2 cup
feta cheese (crumbles)
1⁄2 cup
cucumber (peeled, chopped)
1 ounce
1 tablespoon
1 teaspoon
cinnamon (ground)
1⁄8 teaspoon
2 tablespoons



  • Preheat over to 350°F
  • Spread walnuts out on baking sheet 
  • Bake for about 7 or 8 minutes or until turning brown
  • Add water, cinnamon, and honey to small sauce pan
  • Cook until mixture reaches the soft ball stage
  • Remove from heat and add vanilla
  • Stir in the walnuts and mix well
  • Spoon walnuts onto wax paper and separate
  • Cool
  • Add jam, vinegar, and olive oil to bowl and whisk together
  • In large bowl, mix lettuce, onion, strawberries, cucumbers, and walnuts
  • Dish up into individual bowls 
  • Pour vinaigrette over each salad
  • Sprinkle feta cheese on top
  • Enjoy!
