- Preheat over to 350°F
- Spread walnuts out on baking sheet
- Bake for about 7 or 8 minutes or until turning brown
- Add water, cinnamon, and honey to small sauce pan
- Cook until mixture reaches the soft ball stage
- Remove from heat and add vanilla
- Stir in the walnuts and mix well
- Spoon walnuts onto wax paper and separate
- Cool
- Add jam, vinegar, and olive oil to bowl and whisk together
- In large bowl, mix lettuce, onion, strawberries, cucumbers, and walnuts
- Dish up into individual bowls
- Pour vinaigrette over each salad
- Sprinkle feta cheese on top
- Enjoy!
