Sausage & Cheese Casserole

Bake and enjoy this delicious egg casserole. Each serving is worth over 2 large eggs of protein and 1 carb serving. Has less phosphorus, potassium, and sodium than most fast food sausage and egg breakfast sandwiches.

Sausage & Cheese Casserole


Serving size: 1/2 cup

1 cup
turkey sausage
2 cups
egg substitute
6 slices
white bread
1⁄2 cup
cheddar cheese (low fat)
1⁄4 teaspoon
black pepper
1 cup
rice milk



  • Brown sausage in skillet into little crumbles.
  • Drain and put to the side.
  • Beat egg substitute and rice milk in large bowl.
  • Cube bread slices.
  • Mix in cubed bread, sausage, and cheese.
  • Spray 11 x 7 inch baking dish with cooking spray.
  • Pour mixture into dish.
  • Cover and refrigerate overnight.
  • Take out of refrigerator 30 mins before baking.
  • Preheat oven to 350ºF.
  • Bake for 40 mins, uncovered.
  • Check casserole by sticking a knife in the center.
  • If it comes out clean, then it’s done.
