A New Year’s traditional food for bringing luck and prosperity. The brown sugar and apple adds a sweet flavor to the dish. The shredded pork roast is tender and juicy. Each serving has 18 grams of protein and 1 gram of fiber.

Ingredients

2 pounds
pork roast
12 ounces
sauerkraut (low sodium)
1  
cooking apple (large, chopped)
1⁄4 cup
brown sugar (packed)
1⁄2 teaspoon
caraway seeds
3⁄4 cups
water

Directions

Instructions

  • Mix sauerkraut, chopped apple, caraway seeds, and brown sugar in medium bowl
  • Add mixture to crock-pot
  • Place pork roast on top of mixture
  • Add water
  • Cover and cook on low for 6-8 hours
  • Take 2 forks and shred pork once fully cooked
