This recipe substitutes cauliflower for potatoes. Only 6 grams of carbs with 2 grams of fiber. Lower in sodium.

Party Mashed Cauliflower


Serving size: 1/2 cup (4.2 ounces)

16 ounces
cauliflower florets (bite-size)
1 tablespoon
garlic powder
1⁄2 cup
sour cream
1 tablespoon
1⁄4 teaspoon
black pepper



  • Preheat oven to 350°F.
  • Boil cauliflower till soft.
  • Place in food processor along with the rest of the ingredients.
  • Blend till smooth.
  • Transfer mashed cauliflower mixture into baking dish.
  • Bake in preheated oven for about 30 minutes.
