This is a flavorful dip that is served with many Indian dishes. It has a cooling effect on spicier foods. This natural food is also thought to enhance digestion.

Ingredients

1 tablespoon
coconut (dried, unsweetened)
3 cloves
garlic
1  
chili pepper (sliced)
1 teaspoon
lime juice
1 bunch
mint
1⁄2 bunch
cilantro
1⁄2 cup
water
1 tablespoon
olive oil

Directions

Instructions

  • Add coconut to non-stick pan
  • Cook on low heat till toasted
  • Place coconut to the side in a bowl
  • Add olive oil to the skillet
  • Cook garlic cloves over medium-low heat
  • Mix in chili pepper slices after about a minute
  • Cook till peppers are tender
  • Turn the heat down to low
  • Stir in the mint, cilantro, and lime juice
  • Continue cooking for another minute
  • Take skillet away from the heat
  • Add the coconut to the mixture
  • Let cool for a few minutes
  • Add mixture and water to blender
  • Blend until smooth
  • Keep in the refrigerator till time to use
