This makes it a little easier for potato soup to fit into your diet! Each cup has 4 grams of protein, 21 grams of carbs, and 2 grams of fiber.

potatoes (medium)
4 cups
chicken broth (low sodium)
1 cup
onion (chopped)
3⁄4 cups
celery (chopped)
1⁄2 cup
non-dairy creamer

garlic clove (minced)
1 tablespoon
parsley (dried)
2 tablespoons
unsalted butter
3⁄4 cups
green onion (chopped)

Directions

Instructions

  • Heat butter in skillet
  • Add onion, celery, and garlic
  • Cook until tender
  • Add to large sauce pan along with demineralized potatoes, broth, parsley, and nondairy creamer
  • Simmer on low for 20-30 minutes
  • Make sure to stir and break up the potatoes while it simmers
  • Ladle into bowl and garnish with green onion
