Italian Inspired Tuna Sandwich

This recipe gives the traditional tuna salad some amazing flavor that has an Italian twist. Only 1 ½ carb servings, a great source of protein, and 2 grams of fiber per serving.

Italian Inspired Tuna Sandwich

light tuna (6 oz, in water without salt, drained)
8 slices
italian bread (medium)
1⁄4 cup
red onion (chopped)
1⁄4 cup
green pepper (chopped)
1⁄4 cup
red pepper (chopped)
1 tablespoon
capers (drained)
2 tablespoons
lemon juice
1 tablespoon
olive oil
1⁄4 teaspoon
black pepper



  • Mix tuna, red onion, green pepper, red pepper, capers, lemon juice, olive oil, and black pepper together in a bowl
  • Spread ½ cup of tuna mixture onto a slice of bread
  • Place another piece of bread on top
  • Cut sandwich in half, serve, and enjoy!
