Grilled Chicken with Fresh Peach Salsa


Serving size: 3 ounces chicken, ½ cup peach salsa

1 pound
chicken breasts or tenders (thinly sliced, boneless, skinless)
3⁄4 cups
peaches (fresh, peeled and chopped)
1⁄2 cup
english cucumbers (chopped)
1⁄2 cup
red bell papper (chopped)
1 tablespoon
lime juice
1⁄3 cup
feta cheese
2 tablespoons
mint (fresh, chopped)
1⁄2 teaspoon
cumin (ground)
1⁄2 teaspoon
black pepper (ground)
1 tablespoon
brown sugar



  • Preheat grill to medium heat
  • Combine peaches, cucumbers, red pepper, and lime juice in a bowl
  • Cover and set to the side for later
  • Place chicken breast on preheated grill
  • Flip chicken at least once
  • Grill until completely cooked with an internal temperature of 165°F
  • Once the chicken is done, place 3 ounces onto each plate
  • Add the feta cheese and mint to the salsa and mix well 
  • Scoop the peach salsa over the grilled chicken and serve
