chicken breasts or tenders (thinly sliced, boneless, skinless) 3⁄4 cups
peaches (fresh, peeled and chopped) 1⁄2 cup
english cucumbers (chopped) 1⁄2 cup
red bell papper (chopped) 1 tablespoon
lime juice 1⁄3 cup
feta cheese 2 tablespoons
mint (fresh, chopped) 1⁄2 teaspoon
cumin (ground) 1⁄2 teaspoon
black pepper (ground) 1 tablespoon

Instructions
- Preheat grill to medium heat
- Combine peaches, cucumbers, red pepper, and lime juice in a bowl
- Cover and set to the side for later
- Place chicken breast on preheated grill
- Flip chicken at least once
- Grill until completely cooked with an internal temperature of 165°F
- Once the chicken is done, place 3 ounces onto each plate
- Add the feta cheese and mint to the salsa and mix well
- Scoop the peach salsa over the grilled chicken and serve
