1 cup
egg substitute
1 cup
cottage cheese (low fat, low sodium)
1⁄2 cup
colby jack cheese (shredded)
1⁄2 cup
green and red peppers (finely diced)
1 cup
white bread (small cubes)
1⁄4 cup
milk (low fat)
   
cooking spray

Directions

Instructions

  • Preheat oven to 350°F
  • Spray muffin tin with cooking spray and set to the side
  • Spray skillet with cooking spray
  • Add peppers and cook until tender
  • Mix egg, cottage cheese, peppers, cheese, bread, and milk together in a bowl
  • Fill prepared muffin tin about ¾ full with egg mixture
  • Cook in preheated oven for 30-35 minutes or until egg puffs are completely cooked (use a tooth pick or knife to check center to see if done)
  • Run a butter knife along the edges of each egg puff to help get them out of the muffin tin
