Cucumber & Egg Salad Bites

This is a great way to use up your Easter eggs or anytime you have a taste for egg salad! The cucumber adds a great crunch and is a lower carb option instead of bread.

Cucumber & Egg Salad Bites


Serving size: 2 bites

eggs (hard boiled)
1⁄4 cup
onion (diced)
1⁄2 cup
greek yogurt
1⁄4 cup
mayonnaise (low sodium)
1 tablespoon
dijon mustard (low calorie)
1⁄8 teaspoon
black pepper
1⁄2 teaspoon
dill weed
cucumbers (medium, peeled, sliced)



  • Dice hard boiled eggs and put in a medium bowl
  • Add diced onion, yogurt, mayonnaise, and mustard
  • Mix together
  • Scoop a tablespoon of egg salad onto each cucumber slice
  • Mix dill weed and black pepper together
  • Sprinkle on top of each cucumber and egg salad sandwich
  • Keep chilled in the refrigerator until you are ready to serve
