Crock Pot BBQ Shredded Chicken Sandwiches
This tangy, sweet bbq sauce brings the tender, shredded chicken to life. Each sandwich provides a good source of protein, is lower sodium than most bbq sandwiches, and is 2 ½ carb servings.

chicken breast 1 cup
onion (yellow, large, diced) 1 cup
ketchup (low sodium) 1⁄2 cup
honey 1⁄3 cup
red wine vinegar 1⁄2 cup
water 1 tablespoon
worcestershire sauce 2 teaspoons
black pepper 2 tablespoons
brown sugar 1 teaspoon
paprika 12
white hamburger buns (medium)Directions
Instructions
- Mix ketchup, honey, vinegar, water, Worcestershire sauce, black pepper, brown sugar, and paprika together in a small bowl
- Place chicken in the bottom of the crock pot
- Put diced onions on top of the chicken
- Pour the bbq sauce over the chicken and onion
- Cook on low for 6-8 hours
- Take 2 forks and shred chicken meat
- Stir meat in with the bbq sauce
- Serve meat on buns to make a sandwich
