Cranberry Applesauce Cookies
This new version of an oatmeal cookie has oats and ground flax seed as a base, sweetened by applesauce, cranberries, and a touch of brown sugar & cinnamon. Each cookie provides 3 grams of protein and fiber!

1⁄2 cup
butter (unsalted, softened) 1 cup
applesauce (unsweetened) 1⁄3 cup
brown sugar (packed) 2
eggs 1 teaspoon
vanilla 2 cups
rolled oats 1 cup
flax seed (ground) 1⁄2 cup
all-purpose flour 2 teaspoons
cinnamon (ground) 1 teaspoon
baking soda 1 cup
cranberries (dried) 1 ounce
pecans (chopped)Directions
Instructions
- Preheat oven to 375°F
- Blend softened butter, applesauce, and brown sugar together in a large bowl
- Add eggs and vanilla
- Beat until fluffy
- In another bowl, mix together flour, flax seed, cinnamon, and baking soda
- Slowly beat the dry mixture into the wet mixture
- Fold in the oats, cranberries, and pecans
- Place a tablespoon worth of dough on a ungreased cookie sheet
- Leave a couple inches in between each cookie
- Bake for 8-10 minutes or till golden brown in preheated oven
- Let cookies cool for a couple minutes before removing from cookie sheet
- Place on wire rack to cool completely
