Cranberry Applesauce Cookies

This new version of an oatmeal cookie has oats and ground flax seed as a base, sweetened by applesauce, cranberries, and a touch of brown sugar & cinnamon. Each cookie provides 3 grams of protein and fiber!

Cranberry Applesauce Cookies


Serving size: 1 cookie

1⁄2 cup
butter (unsalted, softened)
1 cup
applesauce (unsweetened)
1⁄3 cup
brown sugar (packed)
1 teaspoon
2 cups
rolled oats
1 cup
flax seed (ground)
1⁄2 cup
all-purpose flour
2 teaspoons
cinnamon (ground)
1 teaspoon
baking soda
1 cup
cranberries (dried)
1 ounce
pecans (chopped)



  • Preheat oven to 375°F
  • Blend softened butter, applesauce, and brown sugar together in a large bowl
  • Add eggs and vanilla
  • Beat until fluffy
  • In another bowl, mix together flour, flax seed, cinnamon, and baking soda
  • Slowly beat the dry mixture into the wet mixture
  • Fold in the oats, cranberries, and pecans
  • Place a tablespoon worth of dough on a ungreased cookie sheet
  • Leave a couple inches in between each cookie
  • Bake for 8-10 minutes or till golden brown in preheated oven
  • Let cookies cool for a couple minutes before removing from cookie sheet
  • Place on wire rack to cool completely
