Chopped Mediterranean Greek Salad
This colorful, flavorful salad works great as a side dish. Or add some grilled chicken to make it an entrée! Only 5 grams of carbs and 93 calories per serving.
- Mix together the cucumber, olives, tomato, and red onion in a large bowl.
- Add the olive oil and balsamic vinegar together.
- Then drizzle over the top of the salad.
- Stir to make sure everything is well mixed.
- Add the feta cheese last.
- Keep refrigerated until you serve it.
