This colorful, flavorful salad works great as a side dish. Or add some grilled chicken to make it an entrée! Only 5 grams of carbs and 93 calories per serving.

feta cheese (crumbled)
1 cup
black olives (low sodium, cut in half)

roma tomatoes (chopped)

olive oil

balsamic vinegar
1⁄2 cup
red onion (chopped)

Directions

Instructions

  • Mix together the cucumber, olives, tomato, and red onion in a large bowl.
  • Add the olive oil and balsamic vinegar together.
  • Then drizzle over the top of the salad.
  • Stir to make sure everything is well mixed.
  • Add the feta cheese last.
  • Keep refrigerated until you serve it.
