Cheesecake Frozen Sandwich
This tasty, cold treat can be made well in advance, waiting for you in your freezer. Each serving counts as about 1 ½ carb servings and has 4 grams of protein.

- Break graham cracks in half to make squares.
- Blend cool whip, cream cheese, sugar, and vanilla together in a medium bowl until smooth.
- To firm up the mixture, place in refrigerator or freezer before trying to spread on the graham crackers.
- Spread cream cheese mixture onto a graham cracker square.
- Then place another graham cracker square onto to make a sandwich.
- Place into a freezer baggie.
- Continue with this process till all the sandwiches have been made.
- Place all the sandwiches in the freezer.
- Make sure completely frozen before trying one.
- Enjoy!

You can also mix protein powder into the cream cheese mixture. I tried it with unflavored protein powder. I added 2 scoops, which brought the protein per sandwich up to 7.5 g.
Diabetics can switch out the sugar for a sugar substitute and drop the carbs per sandwich down to around 17 g.
